Sweet Spring Eats: Easter Basket & Birds Nest Cupcakes

By By Jamie Schlechter, Hutchinson MN Publisher Mar 12, 2018 April 14, 2019

Welcome the birds back and the Easter holiday with these easy to decorate cupcakes.
Things you will need:

  • Your favorite cupcake recipe
  • Frosting
  • Candy eggs - jelly beans or chocolate, whatever you like best!
  • Candy birds - the marshmallow variety works great here!
  • Candy handles - choose your favorite rope candy, licorice, etc. (I used fruit strip & cut into strips.)
  • Green food coloring (optional)
  • Coconut (optional)

Directions:

1. Bake cupcakes as directed and let cool.

2. Frost cupcakes with your choice of frosting.

3. Tint coconut green by adding a few drops of food coloring. I used a plastic bag to mix it.

4. Add coconut for "grass" and add eggs on top.

5. Put candy handle on the basket or add the bird to nest

ENJOY!
